"Thai-Style" Fish Risotto

My very first recipe ... hahaha ... well go easy on me ok ^^. The recipe are delicious, fast and cost effective ... so don't expect to much. Hehe .. Well have a try and let me know how it turned out. =P

“Thai-Style” Fish Risotto

Serving: 2

Ingredients:

1 x Ling Fish
½ cup Self Raising Flour (Corn Flour preferred)
Vegetarian Oil
Cummin Powder or Paprika

1 Cup of Rice
1.25 L of Water for Rice
8 x Moro Tomato (Cherry Tomato acceptable)
3 x Button Mushroom (L)
1 x Onion
2 x Spring Onion
Garlic
Parsley

Thai Pesto (Thai flavored chunky dip preferably, can be found at major supermarket ^^)

Steps:

Rice
-  Firstly, cook the rice and set to cool. Overnight rice is acceptable *Hint: Add onions during cooking process

Fish
-  Mix flour with salt, pepper and cumin powder.
-  Cut fish into small bite size pieces, square shape would be ideal.
-  Mix flour mixture with fish and lightly pat, place into cooking pan with good amount of vege oil *Hint: make sure oil is hot (heat steam appeared). Once done, leave it aside.

COOKING!!! YEA

- Fry onion, spring onion, garlic and thai pesto till slightly change color to the onions
- Next, put in the fried fish and tomato (halved) and stir about.
- Add rice into frying process and mix thoroughly. Add decent amount of water for the flavor to absorb into the rice.
- Put mushroom and close the lid.
- Let it cook for 5-10min or until most of the moisture has evaporated.
- Finally, add chopped parsley and served.
