Carbonara Ricesoto

Ingredients:
2 x Bacon Middle Rasher (or Diced Bacon)
5 x Button Mushroom (L)
1 Cup of Rice
1.25 L of Water for Rice
1 x Onion
2 x Spring Onion
4 Tbs Thickened Cream
Butter
Garlic
Parsley
Grated Parmesan (Shaved Parmesan for garnish)
Steps:

- Firstly, cook the rice and set to cool. Overnight rice is acceptable *Hint: Add onions during cooking process.
COOKING
- Place butter into pan, fry onion, garlic, spring onion till brown
- Add sliced bacon and fry till it appears brownish. *Hint: add dry white wine if you have any for that exotic kick.
- Next, add diced mushroom and stir about for a few minutes.
- Mix the rice into frying process and mix thoroughly.
- Add decent amount (¾ cup) of water/stock and the cream
- Let it cook for 5-10min or until most of the moisture have evaporated.
- Add grated parmesan and parsley and stir about before serving.
- Shaved parmesan to garnish.
