"Chorizo Pasta" with Boccacini
Ingredients:
Pasta
Chorizo Sausage
Boccacini
Spanish Onion
Parsley
Parmesan Cheese
Sauce
Tomato (Bag)
Onions (Few)
Garlics
Herbs
Steps:
Sauce (Basic Napoletana)
1. Get a bag of tomato and remove the head part (leaf end) and soak them in a boiling water (not on flame)
2. Remove the skin (basically peel off) and roughly chop the tomatoes
3. Fry diced onions, garlic till brown and add diced tomatoes
4. Cook for 10min and season to taste.
5. Use a food processor or hand-held blender to blend the mixture into a smoothies more less.
Pasta
1. Fry diced spanish onion, garlic and Chorizo sausage till brown and slightly charred.
2. Add sauce and cook for another few minutes and season.
3. Flame off, add cooked pasta (refreshed in boiled water), boccacini and parsley and toss to mix
4. Serve with Parmesan shave.
Hint:
Get really red and ripe tomatoes, in this recipe, semi ripe tomatoes was used (explained the orangy color)
